Mustard is a member of the Brassicaceae family. Mustard seeds are frequently used in cooking, particularly in sauces. Steam distillation/extraction of crushed Brassica SP seeds yields mustard oleoresin. The product is lachrymatory and has a strong odour. The liquid is a pale golden colour.
