Canola oil is also known as rapeseed oil. It is derived from the rapeseeds of bright yellow flowering plants - brassica napus in the Brassicaceae family. Brassica napus is a hybrid variety of Brassica oleracea and Brassica rapa. These rapeseeds are low in erucic acid and are the third-largest source of vegetable oil. The plant grows up to 3 feet with fleshy, hairless, lower leaves, bright yellow flowers, and green rapeseed pods (that ripen to brown).

Rapeseed is cultivated in well-drained soil in Europe and Asia during winters and in Canada and Australia during springs. It is a source of livestock feed and vegetable oil. The canola carrier oil manufacturers cold press the seeds derived from the brown pods and extract a pale yellow, thick oil.
