Asafoetida is dried latex exuded from rhizome or top root of different species of Ferula. It is a part of Apiaceae family. This could be substituted for Silphium in cooking. It has very pungent smell, which lead to its trivial name which is referred as 'stinking gum'. Assafoetida in cooked dishes produces a very smooth flavour which is reminiscent of leeks. This is also known as inguva, ting, kayam and dung.
